Aunty Ivys GF & DF Chocolate cake
Adapted from recipe #4057 from the bestrecipes.com.au website
Ingredients
125g of "Tablelands Dairy free spread" or any other dairy free margarine or butter you have available
1 cup of sugar
1 egg
2 tablespoons golden syrup (be as heavy handed with the tablespoons as you like :) )
1 teaspoon of bicarbonate soda
1 1/2 cups of lactose free cows milk. (Could use rice milk gf soy milk etc)
2 cups of gluten free plain flour (or a gf flour mix of potato flour, rice flour etc)
2 tablespoons of cocoa ( make sure its gf)
1-2 tablespoons cinnamon
Method
1. Cream butter and sugar,add egg and bet well, then mix in the golden syrup.
2. Add the bicarb soda to the milk, stir to dissolve.
3. Add the milk alternately with dry sifted ingredients into the butter mix. Mix together well.
4. Cook in pre-heated oven at approx 200c or 180c in a fan forced oven for 35-50. It really depends on your oven so keep a good eye on it after 35 min until done :)
